Baked Omelet

Baked Omelet, Easiest Fruit Salad and Mary B.'s Frozen Tea Biscuits This was delicious! Everyone really liked it! We will definitely make it again! I added Easiest Fruit Salad and Mary B.'s tea biscuits. Great supper for a damp fall night! This recipe from The Desperate Cook . Be sure to check out all her yummy recipes! Baked Omelet 8 eggs ( I used 4 eggs and 1 cup of Egg Beaters. ) 1 cup milk ( I used skim. ) 1/2 teaspoon seasoning salt ( I just used regular table salt. ) 3 ounces cooked ham, diced ( I used a small can of Hormel ham, rinsed to remove excess fat. ) 1/2 cup shredded Cheddar cheese ( I used 2%. ) 1/2 cup shredded mozzarella cheese ( I used 2% Italian blend that I had on hand. ) 1 tablespoon dried minced onion ( I omitted this because of the kids. ) Preheat oven to 350 degrees. Grease one 8x8 inch casserole dish and set aside. Beat together the eggs and milk. Add seasoning salt, ham, cheddar cheese, mozzarella cheese and minced onion. Pour

Baked Omelet , Easiest Fruit Salad and Mary B.'s Frozen Tea Biscuits Easiest Fruit Salad Combine fruit of your choice - diced apples, bananas, grapes, strawberries, etc. Threw in a few chopped nuts, if you like. Drizzle with a bit of honey and toss to coat fruit. Simple, nutritious and delicious!

I spoon it onto chopped apples, bananas, or a mixture of fruit - kind of a mix between a fruit salad and a dessert! This dip is also good on angel food cake and ice cream. Zap it just a second in the microwave to make it drizzle more easily! It would probably be good just eaten from a teaspoon, but of course that is just a guess! ;) Because of its sugar content, it's not low calorie , so be sure to watch the portion size!

Monday - Baked Potato Soup and Low-fat Corn Muffins Baked Potato Soup I found this recipe HERE ! 4 large baking potatoes - prick, bake @ 450 for 1 hr, let them rest for 10-15 minutes. Peel and chop - I like some larger pieces. 1 lb bacon, chopped, cooked Make a roux with 2/3 C butter and 2/3 Cup flour Stir in 6 Cups milk, cook until thick Add and heat through: 1 cup grated sharp cheddar cheese 4 green onions, sliced 3/4 teaspoon salt 1/2 teaspoon pepper Just before serving add and heat through: potatoes and bacon. Serve w/a dollop of sour cream and a bit of cheese. Low-fat corn muffins 2 cups
