Baked Omelet, Easiest Fruit Salad
and Mary B.'s Frozen Tea Biscuits

This was delicious! Everyone really liked it! We will definitely make it again! I added Easiest Fruit Salad and Mary B.'s tea biscuits. Great supper for a damp fall night!

Baked Omelet

8 eggs (I used 4 eggs and 1 cup of Egg Beaters.)
1 cup milk (I used skim.)
1/2 teaspoon seasoning salt (I just used regular table salt.)
3 ounces cooked ham, diced (I used a small can of Hormel ham, rinsed to remove excess fat.)
1/2 cup shredded Cheddar cheese (I used 2%.)
1/2 cup shredded mozzarella cheese
(I used 2% Italian blend that I had on hand.)
1 tablespoon dried minced onion (I omitted this because of the kids.)

Preheat oven to 350 degrees. Grease one 8x8 inch casserole dish and set aside.
Beat together the eggs and milk. Add seasoning salt, ham, cheddar cheese, mozzarella cheese and minced onion. Pour into prepared casserole dish.
Bake uncovered for 40 to 45 minutes.

    I like the sounds of your fruit salad, it is so simple and healthy. I never thought of adding honey, great idea!!
