Logan's Mom's Italian Meatloaf

Logan's Mom's Italian Meatloaf   Pat the meat mixture into a rectangle and  sprinkle with cheese cubes.  Gently press cubes into meat.  Lining the baking sheet with foil makes for much easier cleaning!  See how the cheese oozes and  why you need the foil!  Cut into "medallions" to serve! My son, Logan, loves Matty's Mom's Meatloaf at Ajax Diner in Oxford, MS. He was out-of-town a few days last week, and I cooked a little welcome home supper for him on Saturday night. He got to choose the menu! He wanted me to try to make Matty's Mom's Meatloaf. For sides, he requested Basic Mac and Cheese, corn, and crescent rolls brushed with Herbed Butter . Good comfort food! We all thought I got pretty close to copying the taste of Ajax's meatloaf! Logan says Ajax cuts their cheese in larger chunks. I'm not going to argue with him.
