The kids aren't crazy about salsa, so rather than putting it directly on the pizza, I served it on the side. I also added a bit of sour cream on the side, too! Delicious! Chili Topping for Hamburgers and Hot Dogs

I did a bit of cleaning out of leftovers from the fridge and freezer. We had leftover Larry Burgers from Saturday. For a nice change, I made a little chili to top these. Larry loves chili cheese burgers! We sprinkled ours with a bit of 2% low fat cheese. Chopped green or red onions are also a tasty topping for this chili, which has a tiny sweetness to it. If you prefer your chili tangier, just omit the sugar and ketchup. In the freezer, we had a bag with a dab of fries and a bag with a handful of mozzarella sticks. I threw all these in the oven to have as sides. I also found a small stack of graham crackers, a part of a bag of mini marshmallows and a few milk chocolate chips in the pantry. Easiest Indoor S'mores

Using ingredients I found in the pantry I put together these quick and easy little desserts. They are fairly low-fat - for dessert. Probably about 3 grams each. Easiest Indoor S'mores Easiest Indoor S'mores Turn on oven broiler. Place graham cracker squares on cookie sheet lined with foil. Place about a dozen milk chocolate baking chips on each square. Place under broiler until chips are soft. Remove from oven. Place one large or several mini marshmallows on top of chocolate chips. Return to oven until marshmallows begin to puff. Watch carefully. Remove from oven and top with another graham cracker square. Return to oven for a moment to heat top cracker.

Larry made "Larry Burgers" for us on Saturday. He made 8 burgers, so we're having the rest for supper tonight. We love chili burgers! So, my plans are to put together a pan of chili to make chili burgers tonight. Because Larry offered to cook burgers for us, I didn't make Emily's Creamy Beef Spaghetti Skillet, but my friend, Donna, said she did and got good reviews from her family. Scalloped Sausage and Hash Brown Casserole

Everyone at Sunday school seemed to think this is a keeper! I just kind of made it using ingredients I had on hand. If you can think of better name for it, let me know! I put this together Saturday night, covered it with foil and stuck it in the fridge. This morning, I just popped it into the cold oven and turned the oven on 350 degrees. It's never a good idea to place a very cold pan into a hot oven, especially glass or stoneware, as the pan can crack or shatter from the extremes of the two temperatures. We love having Breakfast-for-supper! Tonight's meal was enjoyed by all. Larry and the kids all raved about the casserole! So, I guess it's a keeper! I made the casserole early this morning and put it in the fridge. It worked fine! If you are wanting to make this for breakfast, I think you can make it the night before and just pop it in the oven the next morning. I halved both the casserole and muffin recipes, since I didn't want leftovers. I was going to pop few frozen Mary B.'s tea biscuits in the oven. This smaller size helps a bit when you're trying to lose some weight, although one of these tiny little biscuits contains 4.5 grams of fat and almost 90 calories! However, Aunt Jean sent a batch of her sourdough rolls , so we had those instead.
