Valentine's Day is just around the corner! Show the special people in your life a little love with something from your kitchen! Below is one of those oldie-but-goodie easy recipes, Cherry (or Strawberry) Cheesecake Pie! Larry loves this pie! It has been a good while since I have made it.

Cherry (or Strawberry) Cheesecake Pie
1 (9-inch) homemade* or prepared graham cracker crust
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (21-ounce) can cherry (or strawberry) pie filling, chilled
½ cup lemon juice
1 teaspoon vanilla extract
With an electric mixer, beat cream cheese until fluffy.
Add condensed milk and mix thoroughly.
Add lemon juice and vanilla.
Pour filling into crust and chill for 2 hours.
Top with cherry or strawberry pie filling before serving.
Refrigerate leftovers.
*Graham Cracker Crust
1½ cups finely ground graham cracker crumbs
1/3 cup granulated sugar
6 tablespoons butter, melted
Combine crumbs, sugar and melted butter until well blended .
Press mixture into a 9-inch pie plate.
Chill for about an hour and fill.
If you prefer a baked crust:
After pressing mixture into pie plate, bake at 375 degrees for 7 minutes.
Cool and fill.
