Lemon Brownies

These bars have the texture of traditional chocolate brownies, but they have an intense lemon flavor. Zest the lemon and add a bit of the zest to the glaze, if you like!

1 (18-ounce) box lemon cake mix
1 (3-ounce) package lemon gelatin
1/2 cup cooking oil
3 eggs
1 cup powdered sugar
Juice of one lemon

Preheat oven to 325 degrees. Coat a 9x13-inch pan with cooking spray.
Combine dry cake mix, dry gelatin powder, oil and eggs.
Spread batter into prepared pan.
Bake for 25 to 30 minutes or until done.
Make a glaze by whisking together powdered sugar and lemon juice until smooth.
Spoon glaze all over warm cake.
Cool and cut into squares.
