Chicken and Wild Rice Alfredo Bake

This dish is easy and very versatile. You can use a jarred Alfredo sauce or make your own. You can also add a can of drained veggies, if you like. Good choices are: French-style green beans, mixed vegetables, mushrooms and water chestnuts.  Slivered almonds make a tasty addition to this dish, too.

½ cup milk
10 oz. package refrigerated Alfredo sauce*
3 cups cooked cubed chicken
6 oz. pkg. long grain and wild rice mix, prepared according to package directions
1 cup shredded cheddar cheese

Preheat oven to 350 degrees. Coat a casserole dish with cooking spray.
Mix milk and sauce in large bowl; whisk to combine.
Add chicken and prepared rice to sauce mixture; stir to blend.
Pour into prepared dish and bake for 20 minutes, or until bubbly.
Remove from oven and sprinkle with cheese.
Return dish to oven long enough to melt cheese.

*Homemade Alfredo Sauce

3 tablespoons butter
3 tablespoons all-purpose flour
1½ cups milk
salt and pepper, to taste
1/2 cup Parmesan cheese

Melt butter in a saucepan over medium-low heat; add flour and whisk until smooth and bubbly.
Remove from heat; gradually add milk, whisking to keep smooth.
Return to heat and bring to a gentle boil, whisking constantly until thickened.
Add Parmesan cheese; stir until cheese is melted and sauce is smooth.
Add salt and pepper.

  2. im thinking of making something similar this weekend.does the recipe you have equal 10 oz of alfredo sauce? although i do tend to use more sauce, i hate dry casseroles! the recipe i have also has roasted red peppers in it.

  3. Yes, Heather. This amount of Alfredo sauce works well in this casserole.
    I also think roasted red peppers would work well in this casserole! I'll give it a try!

  Dough Burgers Dough burgers are popular in our neck of the woods. Phillips Grocery in Oxford has received national acclaim for their top-secret-recipe dough burger. I ate two while I was staying at the hospital with my dad recently! It is the nearest restaurant!  When Larry and I were newlyweds and living in New Albany, we loved going to Latham’s for their yummy version of this delicious sandwich.
