Larry treated us to his yummy omelets for supper.
I made these simple scones, which went perfectly with the omelets.
The baking powder makes these really light and fluffy. The kids love these!
3 tablespoons butter, melted and slightly cooled
1/2 cup shredded sharp cheddar cheese
2 teaspoons baking powder
1 cup self-rising flour
1 tablespoon melted butter
Preheat oven to 400 degrees. Coat a baking tray with cooking spray.
In a mixing bowl, combine margarine, egg and milk mixture, cheese and baking powder until well blended. Add self-rising flour a little at a time, mixing well. On a well-floured surface, gently knead dough and pat into a square. Cut the square into 4 equal-sized smaller squares. Cut each of these smaller squares in half on the diagonal, making triangles.
Place triangles on prepared baking sheet and brush with the tablespoon of melted butter.
Bake until golden brown, about 12 - 15 minutes.
