Review and Recipes:Cheesy Ham and Hash Brown Casserole, Aunt Jean's Sourdough Rolls and Apple Muffins with Crumb Topping



We love having Breakfast-for-supper! Tonight's meal was enjoyed by all. Larry and the kids all raved about the casserole! So, I guess it's a keeper!

I made the casserole early this morning and put it in the fridge. It worked fine! If you are wanting to make this for breakfast, I think you can make it the night before and just pop it in the oven the next morning. I halved both the casserole and muffin recipes, since I didn't want leftovers. I was going to pop few frozen Mary B.'s tea biscuits in the oven. This smaller size helps a bit when you're trying to lose some weight, although one of these tiny little biscuits contains 4.5 grams of fat and almost 90 calories! However, Aunt Jean sent a batch of her sourdough rolls, so we had those instead. She also brought over a big plate of fried okra, probably the last for the year, as most folks' okra has about stopped bearing. Do y'all how hard it was to not eat that okra?! No pain, no gain - or would it be loss in this instance? Oh, well. It looked yummy!!

The apple muffins were very good, too!
We really ended up with an odd conglomeration of food, but it was all good!

Cheesy Ham and Hash Brown Casserole

Thursday - Cheesy Ham and Hash Brown Casserole, Aunt Jean's Sourdough Rolls and
Apple Muffins with Crumb Topping

Cheesy Ham and Hash Brown Casserole

1 (32 ounce) package frozen hash brown potatoes
8 ounces cooked, diced ham (I used a can of Hormel chopped ham, rinsed with warm water to remove some of the fat.)
2 (10.75 ounce) cans condensed cream of potato soup
1 (16 ounce) container sour cream (I used low-fat.)
2 cups shredded sharp Cheddar cheese (I used 2%.)
1 1/2 cups grated Parmesan cheese (I just sprinkled a bit on top.)

Preheat oven to 375 degrees. Coat a 9x13 inch baking dish with cooking spray.
In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
Bake 1 hour in the preheated oven, or until bubbly and lightly brown.

  1. Yum, Connie! Your casserole looks delicious, and as to okra, I am wild for fried okra. It is bliss on a fork. I have a permanent vision of my mother's cook standing over a cast iron skillet, dishing out fried okra onto a brown paper bag to drain! TASTE GOODNESS!

  2. We call these Schwartie potatoes but don't ask me why. They are often on buffet tables in huge pans. You need a quarterback to stir it all together but boy is it good.
