Well, day one of using my Christmas Planner went really well.  One of the first things for this week was to see what traditions the family wanted to keep and see if there were any new ones anyone wanted to start.  This was really a fun activity - and some of the answers were surprising.  Now that both of the kids are older, you just never know what appeals to them! As much as I miss a little one around the house, teens really are fun, too!

This is a quick and easy little stew I created for our lunch. It was a big hit with the kids, and there was enough for our supper, too. Larry gave it a  big thumbs up!  There's just something about men folk liking meat and potato dishes, isn't there? We had oyster crackers with the soup at lunch, but I made Low-fat (or Not!) Corn Muffins for supper.  A good hearty dish for this cooler weather!

Hearty Beef and Potato Soup

Hearty Beef and Potato Soup/Stew
2 lbs. stew meat
1 (10 1/2 ounces) can Campbell's French onion soup
1 (26 ounces) carton beef broth (I used Swanson's Beef Cooking Stock)
5 medium potatoes, peeled and cubed
1 -2 (10 1/2 ounces) cans cheddar cheese soup (Use one for more of a soup, 2 for more of a stew.)

Brown beef in a nonstick stock pot.  Add French onion soup and broth.  Bring to a boil.  Reduce heat.  Cover and simmer for 20 minutes - longer if time allows.  Add potatoes.  Bring pot to a boil and boil until potatoes are tender - about 15 mnutes.  Add cheddar cheese soup.  Stir until smooth and heated through.  Enjoy!

Variations:
I think cream of mushroom soup would be good in this, too.  Maybe one cheese and one mushroom!

  Dough Burgers Dough burgers are popular in our neck of the woods. Phillips Grocery in Oxford has received national acclaim for their top-secret-recipe dough burger. I ate two while I was staying at the hospital with my dad recently!
