Apple Walnut Muffins

This is always a hectic time of year, as we get started back with our school work. Although this often brings about a good many changes in our planned menu, I have found it better to not exactly follow the plan, as to have no clue what's for supper. We had enough leftovers for supper tonight, so I didn't cook. I may make the pizza I had planned for tonight for our lunch one day.

I did make these Apple Walnut Muffins for Larry to take to "The Crew" this morning. There were enough for our breakfast, too. We all liked them, and it was a great way to use more of Mr. Willie's apples! I didn't add the cinnamon, because Larry doesn't care for it. They were still very yummy - and moist!

Apple Walnut Muffins

2 cups chopped apples
3/4 cup sugar
1 1/2 cups self-rising flour
1 1/2 teaspoons ground cinnamon
1/2 cup chopped walnuts
2 large eggs, beaten
1/2 stick butter, melted and slightly cooled

Chop apples and stir in sugar. Sit aside about 10 minutes to let apples release their juices.

Sift the dry ingredients together. Add nuts, stirring to coat. Set aside.

Whisk together eggs and butter; fold egg mixture and apples into dry ingredients.

Spoon into muffin pan that has been sprayed with cooking spray. Bake until golden brown, 10 - 15 minutes.

  2. I have some apples I wasnt sure what to do with them, I wanted to do something different. We love muffins and so do our neighbors, so now I know what I will do with them, thanks for another great idea !
