Just want to say a quick thanks to everyone for reading! We just completed our first three months of blogging. I understand this is a bit of a milestone in the blogging world.

It has really been fun! It started out as a little project for Logan and me to work on together. Before long, Larry and M.C. were involved, as well. Larry has enjoyed taking the photos when he can. (The good photos are his. The not-so-good ones are mine!) M.C. has also taken a few of our photos, and she is the best little sous chef any mom could ever hope for! It's become a fun family hobby!


Thank you so much for all your sweet comments! We appreciate your encouragement and love hearing that you've tried a recipe or two!! The Lord's richest blessings to you all!

Meal Plan for August 3rd - 9th

We have a very busy week next week. Weeks like this is where meal planning really pays off!! I’ve chosen some very quick and easy recipes to use. We will eat sandwiches for lunch and save our leftovers for a “Leftover Buffet” on Thursday night!


Monday - Connie’s Rotel Chicken Lasagna, Easy Caesar Salad, and Garlic Bread

Connie’s Rotel Chicken Lasagna


This is one of my attempts at creating a recipe! No promises of how it’s going to turn out!! I’m sure adjustments will need to be made!! We’ll see!!

1 (15 oz.) container ricotta cheese
8 oz. cream cheese, softened
1 can condensed cream of cheddar soup
1 can Rotel tomatoes
2 - 3 c. cooked chicken or turkey, chopped
2 cups shredded Velveeta or cheddar cheese
8 lasagna noodles
2/3 - 1 c. boiling water or chicken broth
2 cups shredded Italian-blend cheese

Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.

Combine ricotta cheese, cream cheese, soup, Rotel tomatoes and chicken.

Place a very thin layer of the chicken/cheese mixture in bottom of baking dish. Top with four of the uncooked lasagna noodles.

Spoon 1/2 of the chicken/cheese mixture over noodles. Sprinkle with the shredded Velveeta.

Add another layer of noodles. Top with the remaining cheese mixture. Sprinkle with remaining Velveeta.

Slowly pour boiling water into dish, around the edges. Cover tightly with foil.

Bake for about an hour. Remove from oven. Sprinkle with Italian-blend cheese. Return to oven long enough to melt cheese. Remove from oven and allow to cool a bit before cutting.


Tuesday - Crazy Crust Pizza

1 pound ground beef, browned and drained
1 cup all-purpose flour
Dash salt and pepper
1 teaspoon Italian seasoning
2 eggs
2/3 cup milk
1 jar of pizza sauce*
1 cup (4 ounces) shredded part-skim mozzarella cheese

*Make your own sauce by combining:

2 - 8 ounce cans tomato sauce
1 tablespoon dried Italian seasonings
1/2 tsp Garlic salt
1 teaspoon sugar (optional)

Preheat oven to 375 degrees.

In a small bowl, combine flour, salt, pepper, Italian seasoning, eggs and milk; beat until smooth. Pour batter into a jelly roll pan. Tilting the pan so the batter covers the bottom. Spoon beef over batter.

Bake at 425° for 25-30 minutes. Remove from oven. Top with pizza sauce and top with mozzarella cheese. Return to oven and bake 10-15 minutes longer.


Wednesday - Caesar’s Fish, Baked Crispy Fries and Hush Puppies

Caesar's Fish

1 lb. fish fillets (I will get some fresh MS catfish from Piggly Wiggly.)
½ cup commercial Caesar salad dressing*
1 cup Ritz cracker crumbs
½ cup Parmesan Cheese
2 Tablespoons melted butter

Make your own Easy Caesar Dressing by blending the following ingredients in a food processor. Half the recipe for use in Caesar’s Fish.

1 cup mayonnaise
1 tbsp lemon juice
1 tsp Worcestershire
1 clove of garlic (minced)
1/4 tsp salt
1/8 tsp pepper
1/2 c Parmesan cheese
1 tbsp of milk or half and half

Preheat oven to 400 degrees.

Combine crumbs, cheese and butter; set aside.

Place fillets in a 9x13 baking dish sprayed with cooking spray.

Drizzle with Caesar dressing.

Bake for about 5 minutes. Remove from oven. Sprinkle with crumb mixture. Return to oven for another 5 - 10 minutes, until fish flakes easily.


I will bake some Kroger Crispy Fries and the Hush Puppies we like from Wal-mart at the same time I bake the fish.

Friday - Eat Out!!


Saturday - Pot luck get-together with friends!! Maybe I’ll get us some new recipes for us!!!

Dough Burgers

  Dough Burgers Dough burgers are popular in our neck of the woods. Phillips Grocery in Oxford has received national acclaim for their top-secret-recipe dough burger. I ate two while I was staying at the hospital with my dad recently! It is the nearest restaurant!  When Larry and I were newlyweds and living in New Albany, we loved going to Latham’s for their yummy version of this delicious sandwich. Several other area cities also offer well-known versions of this unique burger. Tupelo’s Johnny’s Drive-In has the "Johnnieburger," and Corinth even has a festival named in honor of their dough burger, affectionately known as “The Slugburger.” Here in our own dear Pontotoc, we love the "Wonderburger" at Butcher Block!
