Crescent Chicken Bundles

Crescent Chicken Bundles    This was a big hit with Larry and the kids! They loved the Chicken Bundles and the gravy.  With the mashed potatoes, I was able to use the last of our potatoes, which were nearing the end of their usefulness.  Green beans, English peas or a simple salad would also make nice accompaniments to this meal! Crescent Chicken Bundles 1 cup cooked, chopped chicken 4 ounces cream cheese softened 1/4 cup shredded cheddar cheese 1 (8-count) tube crescent rolls 1 tablespoon melted butter Preheat oven to 350 degrees. Lightly coat a baking sheet with cooking spray. Combine cream cheese, cheddar cheese and chicken. On a lightly floured surface, open crescent rolls and separate dough so that you have four squares. Spoon meat mixture into the center of each piece of dough, dividing it evenly among squares. Pull the 4 corners of each square to the top center of mixture, twisting dough slightly. Seal edges by pinching. Brush tops wit...

Praline-topped Brownies

Praline-topped Brownies Praline-topped Brownies As the name implies, this dessert is a basically a brownie topped with a praline. Very rich! And, very good! Prepare a 9x13-inch pan of brownies, according to package directions, using “cake-like” instructions. Cool. Icing: 2  cups  firmly packed light brown sugar 2/3 cup half-and-half, evaporated milk or whipping cream ½ cup  butter 2  cups sifted powdered sugar 1 teaspoon vanilla 2 cups coarsely chopped pecans, toasted Melt butter in a 3-quart saucepan. Add brown sugar and half-and-half and bring to a boil: stir often. Boil for 1 minute. Remove from heat; whisk in sifted powdered sugar and vanilla until smooth. Add toasted pecans. Stir gently until mixture begins to cool and slightly thicken. Pour over brownies. Cool brownies completely and cut into squares. Click  HERE   for more great treats to Tempt Your Tummy!

Strawberry Crepes

Strawberry Crepes Let the wife make the husband glad to come home,  and let him make her sorry to see him leave.   ~ Martin Luther Since I've been a bit stretched the past few weeks, Larry has graciously thrown in and done more of the cooking.  (Have I mentioned lately how much I love this man?!)  He played around with some "kicked-up" versions of his regular pancakes, and then he moved on to crepes. My lips have enjoyed every moment of his experimenting!  But, my waistline isn't fairing nearly as well!! He volunteered to make crepes for Sunday school yesterday. We all thought they turned out great!! He's still perfecting his crepe batter. I'll post the basic Bisquick recipe.  If any of you are crepe makers and have tips you'd share with him, please pass them along!  Strawberry Crepes Crepes: 2 eggs 1 cup Bisquick 3/4 cup milk Beat eggs slightly; add remaining ingredients ...

Menu Plan Monday

Commit your work to the LORD,    and your plans will be established.  Proverbs 16:3  I am still working on clearing out my fridge and pantry. Here are the recipes I came up with to help me accomplish this: Monday - Pepperoni Pie Pepperoni Pie I tweaked this to use ingredients I already had on hand from a recipe shared by Laura at MPM last week. 1 unbaked 9-inch deep-dish pie shell 2 cups shredded pizza cheese blend, divided 1 (2-ounce) package pepperoni slices 1½ cups half-and-half (or milk) 3 eggs, beaten 3 tablespoons Bisquick 1/4 teaspoon garlic salt 1 teaspoon dried Italian seasonings Preheat oven to 350 degrees. Sprinkle 1 cup of cheese into the bottom of pie shell.  Top cheese with half of the pepperoni slices. Whisk together the milk, eggs, flour, garlic salt and Italian seasoning.  Pour into pie shell. Top with remaining pepperonis.  Sprinkle with the remaining cup of cheese. Bake for 40 - 50 minutes. Tuesday -...

Sausage and Corn Stuffing Casserole

Sausage and Corn Stuffing Casserole Sausage and Corn Stuffing Casserole  This was my first time to try this casserole. Larry and Logan really liked it! I had part of a bag of stuffing mix that I needed to use, and this recipe was a good way to use it. The original recipe called for 1/4 milk. I know that the desired texture of stuffing/dressing varies from region to region, and even family to family. I could tell when I mixed the ingredients for this casserole with only the 1/4 cup of milk, that this texture would way too dry for this Southern family. I ended up increasing the milk to 2 cups. It was perfect to us. I've changed the amount in the recipe below to read 1 - 2 cups of milk, depending on desired texture. I also think you could add a can of cream of celery soup, if you prefer a creamier casserole. Again, it's a personal preference sort of thing! This is definitely one of those recipes with which you can experiment. I will make this again, especially if I'm needing...
