Menu Plan Monday

 I am still working on clearing out my fridge and pantry. Here are the recipes I came up with to help me accomplish this:

Monday - Pepperoni Pie

Pepperoni Pie

I tweaked this to use ingredients I already had on hand from a recipe shared by Laura at MPM last week.


1 unbaked 9-inch deep-dish pie shell
2 cups shredded pizza cheese blend, divided
1 (2-ounce) package pepperoni slices
1½ cups half-and-half (or milk)
3 eggs, beaten
3 tablespoons Bisquick
1/4 teaspoon garlic salt
1 teaspoon dried Italian seasonings

Preheat oven to 350 degrees.
Sprinkle 1 cup of cheese into the bottom of pie shell. 
Top cheese with half of the pepperoni slices.
Whisk together the milk, eggs, flour, garlic salt and Italian seasoning. 
Pour into pie shell.
Top with remaining pepperonis. 
Sprinkle with the remaining cup of cheese.
Bake for 40 - 50 minutes.

Tuesday - Crescent Chicken Bundles and mashed potatoes

Wednesday - Ham and Cheese Crepes and fruit

Ham and Cheese Crepes

Crepes:

Prepare crepes or use ready-made.

Filling:

2 -3 green onions, finely chopped
1 tablespoon butter
1 (8 ounce) cream cheese, softened
1 cup shredded or chopped ham
1 cup shredded cheese

Preheat oven to 350 degrees. Coat a shallow baking dish with cooking spray.
Sauté onions in butter.
Combine sautéed onions, cream cheese, ham and Swiss cheese.
Divide mixture evenly among crepes, roll up and place in single layer in greased shallow baking dish.
Top with cheese sauce and bake for 20 minutes.

Cheese sauce:


1 tablespoon butter
1 tablespoon flour
Dash salt and cayenne pepper
1 cup half-and-half or milk
1/2 c. shredded Swiss cheese

Stir together butter, flour, salt and cayenne pepper over low heat until bubbly.
Add half & half.
Boil 1 minute, stirring constantly.
Remove from heat and add cheese, stirring until cheese is melted.

Thursday - Leftovers Buffet

Friday - Eat out!

Georgia Cornbread Cake

I clipped this recipe several years ago from American Profile, which is a small magazine insert that come with our local newspaper, The Pontotoc Progress. It is yummy, yummy, yummy!  I love the story that accompanied the recipe and was delighted when a Google searched turned up the same article on the web! Dough Burgers

  Dough Burgers Dough burgers are popular in our neck of the woods. Phillips Grocery in Oxford has received national acclaim for their top-secret-recipe dough burger. I ate two while I was staying at the hospital with my dad recently! It is the nearest restaurant!  When Larry and I were newlyweds and living in New Albany, we loved going to Latham’s for their yummy version of this delicious sandwich. Several other area cities also offer well-known versions of this unique burger. Tupelo’s Johnny’s Drive-In has the "Johnnieburger," and Corinth even has a festival named in honor of their dough burger, affectionately known as “The Slugburger.” Here in our own dear Pontotoc, we love the "Wonderburger" at Butcher Block!
