It would be good with no meat and served as a side dish, too! 1 (32 oz.) bag hash brown potatoes (I used the shredded variety.) 1 pound smoked sausage, chopped (I used regular, but you could use Cajun-style, too.) 2 cups shredded Mexican blend cheese 1/2 cup chopped onions 1/2 cup chopped green peppers 2 (12oz.) cans evaporated milk 2 tablespoons all-purpose flour 8 eggs salt and pepper, to taste Saute chopped smoked sausage, onions and peppers, until sausage is lightly browned and veggies are tender.
