White Texas Sheet Cake

This cake is easy to make, and all the ingredients can usually be found in my pantry and fridge.
It was well liked by the Sunday School Crew!
Larry and the kids loved it too!

White Texas Sheet Cake


For a nice change, substitute almond extract for the vanilla.

Cake ingredients:
1 cup butter
1 cup water
2 cups all-purpose flour
2 cups white sugar
2 eggs
½ cup sour cream
1 teaspoon vanilla extract
½ teaspoon salt
1 teaspoon baking soda

Icing ingredients:
½ cup butter
¼ cup milk
4½ cups confectioners' sugar
½ teaspoon vanilla extract
1 cup chopped nuts (optional, but good!)

Preheat oven to 375 degrees. Coat a jelly roll pan (10½x15½ x1-inch) with cooking spray.
Combine flour, sugar, soda, and salt. Set aside.
In a large saucepan, bring 1cup butter and water to a boil. Remove from heat.
Combine eggs, sour cream and vanilla. Add to butter mixture. Mix well.
Add flour mixture to butter/egg mixture. Mix well.
Pour batter into prepared pan. (Batter will be thin.)
Bake for 20 to 22 minutes, or until cake is golden brown and tests done.

Icing:
Combine ½ cup butter and milk in a saucepan; bring to a boil. Remove from heat. Mix in confectioner’s sugar and 1 teaspoon vanilla extract.
Stir in chopped nuts.
Spread icing over warm cake.

I clipped this recipe several years ago from American Profile, which is a small magazine insert that come with our local newspaper, The Pontotoc Progress. Dough Burgers

  Dough Burgers Dough burgers are popular in our neck of the woods. Phillips Grocery in Oxford has received national acclaim for their top-secret-recipe dough burger. I ate two while I was staying at the hospital with my dad recently! It is the nearest restaurant!  When Larry and I were newlyweds and living in New Albany, we loved going to Latham’s for their yummy version of this delicious sandwich.
