White Texas Sheet Cake
For a nice change, substitute almond extract for the vanilla.

Cake ingredients:
1 cup butter
1 cup water
2 cups all-purpose flour
2 cups white sugar
2 eggs
½ cup sour cream
1 teaspoon vanilla extract
½ teaspoon salt
1 teaspoon baking soda
Icing ingredients:
½ cup butter
¼ cup milk
4½ cups confectioners' sugar
½ teaspoon vanilla extract
1 cup chopped nuts (optional, but good!)
Preheat oven to 375 degrees. Coat a jelly roll pan (10½x15½ x1-inch) with cooking spray.
Combine flour, sugar, soda, and salt. Set aside.
In a large saucepan, bring 1cup butter and water to a boil. Remove from heat.
Combine eggs, sour cream and vanilla. Add to butter mixture. Mix well.
Add flour mixture to butter/egg mixture. Mix well.
Pour batter into prepared pan. (Batter will be thin.)
Bake for 20 to 22 minutes, or until cake is golden brown and tests done.
Icing:
Combine ½ cup butter and milk in a saucepan; bring to a boil. Remove from heat. Mix in confectioner’s sugar and 1 teaspoon vanilla extract.
Stir in chopped nuts.
Spread icing over warm cake.
