My sweet friend, Susan, recently prepared and delivered a delicious meal to our family! The food was so yummy and was a real blessing to us during a very difficult time! The Ground Beef Noodle Casserole was a big hit with everyone at our house! It traveled and refrigerated really well. All I had to do at suppertime was pop the casserole into the oven and heat it up! Susan brought it in a disposable pan, leaving me with no need to return a dish! How thoughtful! Along with the entrée, Susan provided a crisp bagged salad, Pepperidge Farm Five Cheese Bread (our favorite Texas Toast!) and her yummy Rice Krispies Candy, that she also thoughtfully remembered us loving! Everything was delicious and provided a much needed and appreciated break from the kitchen! More importantly, Susan's kind deed provided us with a sweet memory of her love for our family!

Ground Beef Noodle Casserole
Susan was kind enough to share her delicious casserole recipe and note her adjustments to it. Whether you make this to share with a friend or for your own family’s supper, it is sure to be a hit!
1 pound ground beef
1 bell pepper (don't use in mine)
1 onion (don't use in mine)
1 can tomato soup
1 5-ounce package medium egg noodles
1 can cream of mushroom soup
1/2 tsp salt (added to noodles while cooking)
1 lb. grated cheddar cheese (I don't measure, I just sprinkle some)
Top with Parmesan Cheese (I use a couple packs from pizza hut)
Brown meat with 2 teaspoons oil, bell pepper and onion. (I omit the oil, onion, and bell pepper).
Cook noodles according to package directions.
Layer in casserole dish starting with noodles, meat, cheddar cheese; repeat .
Combine soups and 1/2 cup of water; pour over layers of noodles, meat and cheese.
Bake at 350 degrees for 45 minutes. Sprinkle top with Parmesan cheese and bake 15 minutes longer. (Not much Parmesan cheese).
