Cinco de Mayo Recipes - Southern-style

Here's a simple menu for celebrating

(You can eliminate the corn in this dish, if you are making the Ranchy Frito Corn Salad, too.)




Mexican-style Corn Muffins

1 package Jiffy corn muffin mix
1 egg
1/3 cup milk (I use buttermilk.)
1 cup shredded Pepper Jack cheese

Preheat oven to 400 degrees. Coat muffin tin with cooking spray.
Gently mix all ingredients until moistened.
Spoon batter into prepared muffin tin, filling each cup about ¾ full.
Bake for about 20 minutes or until golden.

Dulce de Leche Cream Cake

If you don’t want to whip the cream, substitute a large container of Cool-whip for the whipping cream and powdered sugar.

1 (18.25-ounce) package white or yellow cake mix
1 (14-ounce) can sweetened condensed milk
1/3 cup caramel ice cream topping
2 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup sliced almonds, toasted*

Prepare cake mix according to package directions for 13 x 9-inch baking pan; cool completely.
Place sweetened condensed milk in a large, microwave-safe bowl. Microwave at medium power, stirring halfway through, for 4 minutes.
Reduce to medium-low power; microwave, stirring with wire whisk every few minutes, for 16 to 24 minutes or until thick and light caramel colored.
Stir in caramel topping.
Cool for 15 minutes. Spread evenly over cake. Cool completely.
Beat cream in a large mixing bowl until soft peaks form.
Add sugar and vanilla; beat until stiff peaks form.
Spoon over cake; sprinkle with toasted almonds.
Refrigerate for 1 to 2 hours

*To toast almonds quickly and easily in the microwave:
Place 1/2 cup slivered almonds and 1 tablespoon butter in a 9-inch microwave-proof pie plate.
Microwave on high, stirring every minute until brown, 4 to 5 minutes.

Dough Burgers

  Dough Burgers Dough burgers are popular in our neck of the woods. Phillips Grocery in Oxford has received national acclaim for their top-secret-recipe dough burger. I ate two while I was staying at the hospital with my dad recently! It is the nearest restaurant!  When Larry and I were newlyweds and living in New Albany, we loved going to Latham’s for their yummy version of this delicious sandwich.
