Mrs. Carter's Jubilee Jumbles
Many thanks to my friend, Wayne, for posting this delicious recipe! I knew when I saw it that I had to make these for the "Lost Crew." They were a hit! These cake-like cookies are simply delicious! The brunt sugar icing is perfect! This was one of Wayne's mom's recipes. Be sure to take a look at Mrs. Carter's original recipe in her own handwriting. I love that! What a treasure! I have formatted the recipe to conform to my usual way of posting (Y'all have been able to tell I have a format, right?;) I do like Mrs. Carter's version better, though! I am sure her icing looked much neater than mine! The kids were rushing me. Lost was coming on! Thanks again for sharing this, Wayne! These are wonderful!!
½ cup shortening
1 cup dark brown sugar
½ cup regular sugar
2 eggs
2¾ cups plain flour
1 cup undiluted Carnation evaporated milk
1 teaspoon vanilla
½ teaspoon soda
½ teaspoon salt
1 cup chopped walnuts
Mix shortening, sugar and eggs.
Stir in milk and vanilla.
Sift flour, soda and salt. Stir into mixture.
Add walnuts.
Chill for an hour or so. (This appears more like a batter than a dough.)
When ready to bake, preheat oven to 375 degrees.
Drop by rounded teaspoons, two inches apart on greased cookie sheet.
Bake for about 10 minutes.
Cool and ice with Burnt Butter Glaze.
Burnt Butter Glaze:
Heat 2 tablespoons butter until yellow brown.
Beat in two cups confectioner's sugar, 1/4 cup undiluted Carnation evaporated milk and a bit of vanilla.
Spread on cooled cookies.
While I loved Grandmother Carter's food, these cookies were not my favorite...it was her caramel cake that was to die for...

Felicia's right, in that not everyone appreciates these cookies as fully as some of us in the family do. Mom spoiled all of us by preparing our favorite dessert or meal as often as possible. While there was nothing wrong with Mom's caramel cake, my favorite cake was her Coconut cake(fresh grated coconut on divinity icing over white layers). My Christmas Dinners are no longer the same without Mom's cakes. She made everyone's favorite for the Holiday.
ReplyDeleteThese cookies are a very favorite of mine. My aunt first made these when I was a teen...in the 1960's. My mom took over after that and added coconut and raisins as well as walnuts. Just delicious. I am not normally a frosting person but these cookies are not fully the best they can be without the frosting.
ReplyDeleteMy mom used to make these! Now my husband does! Mom always did half the cookies with coconut in the frosting and a whole pecan on top of the rest!
ReplyDeleteThese cookies are to DIE for! My Mother-in-Law turned me onto them and my children fell in love with them. They have become a birthday cake substitute for my husband and son. I like that you add vanilla to the glaze. Delicious! And by the way, your icing looks fantastic. Took me several times making it before I got the consistency right!

ReplyDeleteMy mother used to make these and I couldn’t find her recipe. She would put walnut halves on top or those candied cherries (yuk.) I’m so excited that I will have them for the holidays this year. Minus the candied cherries. Thanks for sharing!
