Sweet and Savory Sausage Muffins
These muffins have an interesting, complex taste. The brown sugar adds a bit of sweetness, the cayenne a touch of heat and the onion a nice savoriness.
1 pound pork sausage
1 bunch green onions
3 tablespoons butter
3 cups baking mix
1 tablespoon packed brown sugar
1 teaspoon dry mustard
1/2 teaspoon ground cayenne
1 cup grated Cheddar cheese
1 cup buttermilk*
2 eggs, lightly beaten
Heat oven to 375 degrees. Coat muffin tins with cooking spray.
Brown and drain sausage. While sausage is cooking, sauté onions in butter.
In a large mixing bowl, combine baking mix, brown sugar, dry mustard, cayenne, cheese, sausage and sautéed onions. Make a well in the center. Add eggs and milk. Stir gently.
Spoon into prepared muffin cups and bake until golden brown, about 20 minutes.
*Buttermilk Substitute
Place a tablespoon of white vinegar or lemon juice in a liquid measuring cup.
Add enough milk to bring the liquid up to the one-cup line
Allow to stand for five minute.
