Shrimp Scampi Stuffed Potatoes
4 large baking potatoes
olive oil
kosher salt
Preheat oven to 400 degrees.
Wash and dry potatoes. Prick potatoes on each side with a fork.
Rub potatoes with olive oil; sprinkle with kosher salt.
Place potatoes directly on oven rack with a foil covered pan on a lower rack to catch any drips.
Bake potatoes until they are tender, approximately 1 hour. You can test for doneness by gently squeezing the middle of the potato, while wearing an oven mitt. If it gives in easily to your squeeze, it is done.
When potatoes are done, remove from the oven to a baking rack, allowing them to cool a bit so that they can be handled.
While potatoes are cooling, prepare shrimp scampi:
1 lb. bag frozen, peeled and de-veined shrimp, thawed
1/3 cup butter
1/3 cup olive oil
1 teaspoon chopped garlic (fresh or jarred)
garlic salt to taste
Heat butter, olive oil, and garlic in a large skillet.
Add shrimp and sauté until pink. If the shrimp is pre-cooked, just heat it through. Add garlic salt to taste.
Stuff potatoes with shrimp scampi. You will need these additional ingredients:
1½ cup shredded cheddar cheese, divided
½ cup sour cream
salt and black pepper, to taste
4 slices bacon, cooked and crumbled
Cut each potato in half lengthwise.
Scoop out potato middles into a medium size mixing bowl.
Set potato skin shells on a baking sheet.
Pour shrimp scampi into mixing bowl with potato middles. Gently combine shrimp scampi with potatoes.
Add 1 cup of the cheese, sour cream, salt and pepper; stir gently to incorporate.
Scoop potato and shrimp mixture into potato shells.
Sprinkle with additional cheddar cheese and crumbled bacon.
Bake filled shells for 10-15 minutes or until thoroughly heated.
