Chocolate Peanut Butter Bars
Logan loves these! He says they're like a peanut butter cookie with chocolate icing!
1¼ cups brown sugar
1 cup butter, softened
2/3 cup peanut butter
2 teaspoons vanilla
1 egg
2 cups flour
½ teaspoon baking soda
Preheat oven to 325 degrees. Lightly coat a 15x10-inch jelly roll pan with cooking spray.
Combine brown sugar, butter, and peanut butter in large bowl; beat until combined. Add vanilla and egg; mix well. Stir in flour and baking soda until dough forms. Press into prepared pan. Bake for 13-18 minutes or until just set. Cool while preparing icing.
Icing:
1 stick butter
4 tbsp. cocoa
6 tbsp. milk
1 lb. powdered sugar
Melt butter; add cocoa and whisk until smooth. Add milk and bring to a boil, while whisking constantly. When mixture reaches a boil, add powdered sugar and whisk until smooth. Spread on bars immediately, while icing is still very warm.
Oh my, those look so good! All I have done since hubby got laid off is cook comfort food. Needless to say my weight loss plan has flown the coop! Hoping maybe Spring will be better. At least I'll be able to get outside! Hope all is well with you and yours. :)
