Mine got a little too brown while I was getting dressed for church! You can tent the dish with foil, if it gets brown before it's fully cooked.

Hash Brown and Smoked Sausage Breakfast Casserole


The smoked sausage was a nice change! Everyone seemed to enjoy it. You could use pork sausage or ham. It would be good with no meat and served as a side dish, too!

1 (32 oz.) bag hash brown potatoes (I used the shredded variety.)
1 pound smoked sausage, chopped (I used regular, but you could use Cajun-style, too.)
2 cups shredded Mexican blend cheese
1/2 cup chopped onions
1/2 cup chopped green peppers
2 (12oz.) cans evaporated milk
2 tablespoons all-purpose flour
8 eggs
salt and pepper, to taste

Saute chopped smoked sausage, onions and peppers, until sausage is lightly browned and veggies are tender.
Coat a 9x13 baking pan with cooking spray.
Layer potatoes, sausage mixture and cheese in prepared pan.
Whisk together evaporated milk and flour. Add eggs one at a time, whisking well after each addition. Add salt and pepper; whisk well.
Pour over layers in dish.
Cover and refrigerate for 4 to 24 hours.

When ready to bake:

Take dish from refrigerator about 30 minutes prior to baking.
Preheat oven to 350 degrees.
Bake, uncovered, for about 1 hour, or until a knife inserted into center comes out clean.
Allow to stand a few minutes before serving.

Bisquick Mini Cheese Muffins

I threw together these little muffins to go with the casserole.

Bisquick Mini Cheese Muffins


2 c. Bisquick
1 cup shredded cheddar cheese
3 tablespoon melted butter
1 egg
2/3 - 1 cup milk

Heat oven to 400 degrees. Spray mini muffin cups. Mix ingredients. Beat vigorously for 30 seconds. Fill muffins 2/3 full. Bake until golden brown and done, about 5 minutes.

  Dough Burgers Dough burgers are popular in our neck of the woods. Phillips Grocery in Oxford has received national acclaim for their top-secret-recipe dough burger. I ate two while I was staying at the hospital with my dad recently!
