Cheesy Hash Brown Chicken Bake

This was a big hit with Larry and the kids.
I think a bit of onion or onion powder would be good in this dish.

Cheesy Hash Brown Chicken Bake

1 can cream of chicken soup*

1 cup sour cream

1/4 cup milk

2 cups cooked, chopped chicken

4 cup frozen, shredded hash brown potatoes, thawed

2 cups shredded cheddar cheese

2 cups crushed potato chips

Preheat oven to 350 degrees. Coat a 9x13 baking dish with cooking spray.

Combine soup, sour cream, milk, chicken and cheese. Remove and reserve one cup of soup mixture. Mix remaining mixture with hash brown potatoes.Spread hash brown mixture into prepared pan. Spread reserved soup mixture over hash brown mixture. Cove tightly with foil and bake for about 30 minutes. Remove foil and sprinkle with crushed potato chips. Return to oven uncovered and bake for about 15 minutes longer.

*I made my own by whisking together 2 tablespoons of flour, 3/4 cup of chicken broth and 3/4 cup of milk until thickened. You can a bit of butter, too.

Dough Burgers Dough burgers are popular in our neck of the woods. Phillips Grocery in Oxford has received national acclaim for their top-secret-recipe dough burger. I ate two while I was staying at the hospital with my dad recently! It is the nearest restaurant! When Larry and I were newlyweds and living in New Albany, we loved going to Latham’s for their yummy version of this delicious sandwich. Several other area cities also offer well-known versions of this unique burger.
