Generally, I have found that a person either loves hummus, or they hate it. Logan and I love it. Larry and M.C. think it's awful!! Below is a recipe I made a couple of days ago. I've been having a bit for lunch each day with toasted pita chips.
Artichoke Hummus
1 (14ounce) can garbanzo beans (drained)
1 (14ounce) can artichoke hearts (drained)
1 - 2 cloves garlic, minced
¼ - ½ teaspoon of cumin
Salt, to taste
1 teaspoon tahini paste (optional)
Juice of 1 - 2 lemons
1/4 cup olive oil
In the bowl of a food processor, combine first seven ingredients; process until smooth.
Drizzle olive oil in slowly while processing.
Sprinkle with paprika. Refrigerate for 1 hour to blend the flavors.
Love hummus!!! I haven't made it with artichokes...we'll have to do that! Sometims I find containers of hummus at Kroger that are greatly reduced and stock up. They freeze well. We like to make my homemade pizza crust, divide it into small balls and cook them on my electric tortilla press. Plain is good, but I like to put green chili peppers and other seasonings in my dough. Delicious and low fat!!
