Brother Ken concluded our sermon series on Waiting for God this morning. He left us with this:
What does it mean to wait for God?
Waiting for God means drawing close the Lord and surrendering all aspects of your life to Him.
What are we waiting for?
We are waiting for the rewards of heaven.
Rejoice, and be exceeding glad: for great is your reward in heaven... Matthew 5:12a
I made this for Sunday school this morning, and it received good reviews. It was delicious warm. I do suspect it's one of those recipes that will taste even better on the second day, after just a bit of waiting! There were a few pieces left, so I'll see.
Nutty Carrot Coffee Cake
If you like raisins and cinnamon, I think a cup of raisins and a teaspoon of cinnamon would be good in this recipe.
4 eggs
2 c. sugar
2 c. grated raw carrots
3 c. flour
1 tsp. salt
3 tsp. baking powder
1/2 tsp. soda
1 cup chopped nuts
1 cup raisins
1 c. oil
1 tsp. vanilla
Preheat oven to 350 degrees.
Beat eggs and sugar; stir in carrots. Add rest of ingredients, mixing well.
Bake in a 9x13 pan coated with cooking stray for about 30 minutes.
Remove from oven and pour glaze over warm cake. (I used a skewer to poke a few holes in mine, so the glaze would ooze down into the cake.)
Glaze:
4 tablespoons butter
1 cup brown sugar
¼ cup milk
