Recipe: Nachos Deluxe

Larry had to work today and was running a bit late. The kids and I went to Rebekah and Will's wedding this afternoon. The wedding was very beautiful!! We decided to save the ribs until Monday night. I think Larry was kind of glad it worked out this way! He is off Monday and can have more of hand in cooking the ribs! He really likes to grill!!
One of the kids' favorite quick meals is Nachos Deluxe. It's one of those things that's easy for everyone to fix the way they prefer. Because we keep pre-cooked ground beef and chicken on-hand, this dish goes together really quickly, too!

1 can refried beans (optional)
2 cups sour cream, divided (optional)
1 lb. ground beef*, browned and drained - add a packet of taco seasoning or a can of drained Rotel tomatoes, if you like
1 (16 oz.) container white cheese dip
1 pkg. tortilla chips
shredded cheese, your choice - cheddar, pepper jack, Mexican blend
shredded lettuce
diced tomatoes
chopped green onions
Salsa
Sour cream

*Can use two cups cooked, shredded chicken instead of ground beef

If using, heat beans according to directions on can. Stir in 1 cup of the sour cream.
Combine cooked meat and cheese dip, and heat until bubbly.
Put desired amount of chips on plate.
Add a layer of bean mixture, if using.
Next, add a layer of the meat and cheese dip mixture.
Top with lettuce, tomatoes, onions, salsa and a dollop of sour cream.

Dough Burgers

  Dough Burgers Dough burgers are popular in our neck of the woods. Phillips Grocery in Oxford has received national acclaim for their top-secret-recipe dough burger. I ate two while I was staying at the hospital with my dad recently! It is the nearest restaurant!  When Larry and I were newlyweds and living in New Albany, we loved going to Latham’s for their yummy version of this delicious sandwich. Several other area cities also offer well-known versions of this unique burger. Tupelo’s Johnny’s Drive-In has the "Johnnieburger," and Corinth even has a festival named in honor of their dough burger, affectionately known as “The Slugburger.” Here in our own dear Pontotoc, we love the "Wonderburger" at Butcher Block!
