There are a ton of recipes, with many variations, for this cake. They all taste somewhat similar. My friend, Julie R., makes the best! I've got to get her recipe!
It was M.C.'s lucky year! She also received a delicious Primo's Strawberry Cake from Leigh Ann and Brendan! It's feast or famine! Between the birthday celebration and Father's Day, we've almost eaten both cakes!
Strawberry Cake I
1 cup oil
1 white cake mix
4 eggs
1 small box strawberry Jell-o
1/2 cup water
1 cup frozen strawberries - thawed & mashed - drain & save juice
Preheat oven to 350 degrees.
Empty cake mix into mixing bowl. Add Jell-o. Whisk cake mix and Jell-o together. Add oil. Add eggs, one at a time. Add enough water to strawberry juice to equal 1/2 cup. Add to batter, and beat for 2 minutes. Bake in layers until done. Let cake completely cool before frosting.
FROSTING:
3 3/4 cup powdered sugar
1/2 stick melted butter
drained, mashed strawberries
Beat all ingredients together until well blended.
