Grilled Shrimp, Garlic Parmesan Potatoes, Grilled Frozen Corn-on-the-cob and Hush Puppies

We are back from a fun-filled few days at the beach! We had a great time and ate a ton of seafood! I guess we couldn’t get enough of a good thing, because we carted a cooler of it home with us!
Larry cleaned all the shrimp, bless his heart, and grilled some of it for dinner tonight.
We had Grilled Shrimp, Garlic Parmesan Mashed Potatoes, Grilled Frozen Corn-on-the-cob and Hush Puppies. We are stuffed!

Grilled Shrimp


Before you begin the rest of you meal, peel and devein shrimp. Coat with a bit of olive oil. Place on skewers, cover with plastic wrap and place in fridge until ready to grill.

Be sure the rest of your meal is ready before you place the shrimp on the grill. They will cook quickly!!

Remove skewered shrimp from fridge. Sprinkle with Lawry’s Season Salt. Place on hot grill, turning once. Watch closely. Shrimp cook quickly. When they turn pink, they’re done.

Garlic Parmesan Mashed Potatoes

Peel and slice enough potatoes to feed your family. I usually cook one medium potato per person. Cover potatoes with water and add a teaspoon of salt. Bring to a boil. Cook until potatoes are fork-tender.

While potatoes cook, melt 2 - 4 tablespoons of butter, or to taste, over low heat. When butter is melted, add 2 cloves of minced garlic. You can add as much garlic as you like. Keep the pan on low heat. Do not brown the garlic.

When potatoes are tender, drain in a colander and return to cooking pan. Pour butter and garlic mixture over potatoes. Add a cup of Parmesan cheese. If you like your potatoes creamy, you might want to add a bit of milk, too. Stir well to combine all ingredients.

Grilled Frozen Corn-on-the-cob

Remove enough ears of frozen corn from bag for your family. Place corn on plate and zap in the microwave just until thawed. For four ears, it takes about 6 minutes on high. Put corn on foil, place on the upper rack of the grill, and brush with butter. Cook until done. About 5 minutes or so.

Hush Puppies

We all really like these hush puppies from Wal-mart. The bag doesn’t have a brand name, not even Great Value. It simply says - Hush Puppies. On the back of the bag, it says they are distributed by Wal-mart. They are really good and a hit with all of us. As Larry says, they are better than many restaurant hush puppies. I just follow the directions on the bag for baking them.

Dough Burgers

  Dough Burgers Dough burgers are popular in our neck of the woods. Phillips Grocery in Oxford has received national acclaim for their top-secret-recipe dough burger. I ate two while I was staying at the hospital with my dad recently!
