Chocolate Chip- Sour Cream Bars
1½ cups sour cream
3 eggs, beaten
1 cup sugar
2½ teaspoons cornstarch
1½ teaspoons cinnamon
1¾ cups quick-cooking oats
1¾ cups all-purpose flour
1 cup brown sugar, packed
1 teaspoon baking soda
½ teaspoon salt
1 cup butter, softened
Combine sour cream, eggs, sugar, cornstarch, and cinnamon in a medium sauce pan. Cook, and stir over low heat until blended; cool.
In a large bowl, mix together remaining ingredients until crumbly.
Press half of oat mixture into a sprayed 9x13-inch baking pan.
Sprinkle with chocolate chips.
Spread with filling mixture; crumble remaining oat mixture over top.
Bake at 350 degrees for 30 minutes.
Cool; cut into bars.
