Ecclesiastes 3:1 The coming of fall brings a couple of changes to our meal plan. During the fall and winter months, we have a soup night and breakfast-for-supper night. We keep pizza night, and the other nights vary a bit depending of the meats I choose for our soup, pizza and breakfast-for-supper nights. I like to have our soup night on Mondays. This has two big benefits. Mondays are usually fairly hectic around here, and soup is generally pretty easy and quick to throw together. Philly Cheese Steak Pizza This past Sunday, we looked at the lives of Jonah and Joseph, as Brother Ken continued the sermon series on waiting for God. Both of these men spent some time in unique “waiting rooms.” The Bible tells us that “…the LORD provided a great fish to swallow Jonah, and Jonah was inside the fish three days and three nights.” (Jonah 1:17) Joseph’s story is told in Genesis, chapters 37-50. There we learn that Joseph spent over two years in an Egyptian prison, falsely accused. One interesting thing to me is that both of these fellows found themselves in trouble due to their pride. Jonah was prejudice and self-absorbed, constantly complaining and not wanting to bring the Lord’s message of repentance to the Ninevehites. Unfortunately, Joseph, too, suffered from a pretty good case of self-admiration, sporting around in that colorful coat of his, while sharing his dreams of having lordship over his brothers, and even his father! Blueberry Pudding Cake

Blueberry Pudding Cake Easy, quick, and yummy!! Very cobbler-like! Great with a scoop of vanilla ice cream.   Blueberry Pudding Cake Ingredients: 2 c blueberries 1 t cinnamon 1 T lemon juice 1 c flour 1 1/2 c sugar, separated 1 t baking powder 1/2 c milk 3 T butter, melted 1/2 t vanilla 1 T cornstarch 1 c boiling water Toss the blueberries, lemon juice and cinnamon together, and place in an 8x8 greased baking dish. Combine the flour, 3/4 c of sugar, and baking powder and mix thoroughly. Add the milk, butter, and vanilla and mix gently until just combined (I mix them all together in my liquid measuring cup first then add to the dry ingredients). Spoon the batter over the blueberries. Mix the remaining 3/4 c sugar and cornstarch. Sprinkle over the batter. Pour boiling water (yes, really) over the entire cake. If you have already copied this recipe, please note that there was an error in the original post. I should had listed the flour as 3 tablespoons, not teaspoons. I've corrected it in the original recipe and in the re-post below. Also, I only added about 2 cups of the chicken broth. I guess it depends on how thick you like your soup. We like ours on the thicker side, so I reduced the broth. I served ours with corn tortilla strips, which contain a lot less fat than commercially prepared tortilla chips. To make these, cut corn tortillas into strips, put them on a cookie sheet, spritzed them with cooking spray, and baked them at 400 degrees until crisp, stirring occasionally . 3 tablespoons flour 1.4 ounce packet fajita or taco seasoning mix, divided ( I used a packet of McCormick's Fajita Seasoning. ) 4 boneless, skinless chicken breasts, cubed 3 teaspo...

Busy, Fun Weekend and Restaurant Review: Emileigh's Table

We had a full, but fun, week-end, with two wedding receptions, a trip to Oxford, a visit from my dad and a late Sunday lunch with Dude and Aunt Jean. All events included some really good eats!! Both wedding receptions were lovely! With the growing trend of destination weddings, these receptions are becoming a regular event in our area and, I assume, across the country. Great food was served at both! Best wishes and many blessings to both of these sweet couples!!
